Sometimes Corfu hides its best secrets from visitors.
One such a secret is nerantzosalata, the island’s delicious orange salad.
Apparently considered too simple a dish, few restaurants today serve this delicacy.
Wonderfully sweet, sweet sun ripened oranges combined with olive oil, salt and paprika creates an almost unimaginable sensation to the taste buds.
Strangely, the name refers to a kind of bitter or sour orange, but a sweet orange works just as great if not better.
Of course, the secret also lies in adding the flavoring in the correct proportion to get the best out of the blend.
“Nerantzo”, being derived from Italian, is another example reflecting the influence of four centuries of Venetian reign of the Ionian islands.
